Real Food Meal: Black Bean Tostadas

Before we started this real food journey, we ordered pizza every Friday night.  Once I started weight watchers and realized how many points were in a single piece of pizza (7 points in one piece) I began to look for other options for our traditional pizza night.  Now every Friday we make our own pizzas using whole wheat tortillas or whole wheat pita bread, pesto, mushrooms, spinach, raw cheese, tomatoes, and whatever other veggies we have on hand.  I love pizza night because we can each make our own, even Noah, with whatever we want on our personal pizza!  Every week I let Noah pick one item at the Farmer’s Market to buy.  Last week he picked corn so I thought I’d change our pizza night up a bit and make tostadas, corn, and guacamole!

For Noah’s tostada, I spread avocado, black beans and raw cheddar cheese on a whole wheat tortilla.  For Nelson and myself, I used the Trader Joe’s Cowboy Caviar (Nelson’s favorite!) and raw cheddar cheese.  We dipped ours in homemade guacamole for an extra treat.  I also used Trader Joe’s Organic Whole Wheat and Corn Flour Tortillas for the tostada base.  I still haven’t tried making my own tortillas but it’s one of my summer goals!

Bake your tostadas in the oven at 415 for 7-10 minutes.

I’m embarassed to say that this was my very first time to make corn on the cob!  Noah and I took the husks off the corn and cleaned it together.  I couldn’t believe my eyes when I read online that it only needed to boil for 3 minutes on the stove!  What?!  So easy!!!  Simple meal, real ingredients, easy prep, yummy taste!  Be inspired to try new things in your kitchen and have a great week!
